Aslam’s Chicken Tikka Masala Recipe

During the 1970s, a customer asked Aslam if there was any way to make his chicken tikka ‘less dry’.

The chef added a creamy sauce to the dish and that’s how chicken tikka masala was born.

This dish was invented by making a sauce made from a can of tomato soup at his restaurant Shish Mahal in 1970.

“Chicken tikka masala was invented at this restaurant,” says Ali. We often make chicken tikka and one day a customer said, ‘I’ll use some sauce with that, it’s a bit dry,'” Ali said.

“We thought it would be better to cook the chicken with some gravy. So from here, we cooked chicken tikka with a gravy containing yogurt, cream and spices.”

Later, this dish became the most popular dish in British restaurants, surpassing all other dishes and making its mark in the hearts of Westerners.

Ali said the chicken tikka masala is prepared according to the customer’s taste.

“Normally they don’t eat hot curry, that’s why we cook it with yogurt and cream,” he said.

“Chicken tikka masala is now truly Britain’s national dish, not just because it is the most popular but also because it is the perfect illustration of how Britain has absorbed and adapted to outside influences,” Cook said in a 2001 speech about British identity.

Chef Aslam wanted this dish to be a gift to Glasgow, to give something back to his adopted city.
